Series of kitchen knife blades
Our new series of "Scandinavian Chef" blades is the culmination of about a decade of design and manufacture of our own knife blades. We now have unique access to a new type of solid and stainless Damascus steel. Therefore, we have combined all our best efforts in this new series of improved knife blades. »
Design
The blade is designed by Michael Sort Mouritsen, Raffir product developer, in cooperation with dedicated astronomers and professional chefs. The design is inspired by the functionality of Japanese and European knife blades. In addition, the lines are drawn with inspiration from soft curves of the danish landscape. Thus, the result is an original and functional Scandinavian blade design. »
Steel type
The steel used is highly alloyed stainless damas. Since this is a high quality type of solid steel, it is not necessary to use a harder core steel. Core steel is required in most of Damascus's industrially manufactured blades. Instead, these blades are fixed flat CNC precisely from a solid bar of beautiful highly alloyed Damascus steel. Silk is welded in a solid puzzle joint to maintain quality/price ratio. The two types of steel that make up the cloudy pattern of the blade are 440C and N690 strongly alloyed. We analyzed the steel in depth with our partner Raffrir Brazil to ensure its quality. This steel is one of the main reasons why we think these are the best leader knife blades we have created. »
Available models
There are five models in the Scandinavian Chef blade series. First, we have the big 250 mm chef knife to cut the big roast. Second, there is the wide Chopper, which is perfect for slicing vegetables. We also kept the bottom corner of the sharp edge to make it perfect for peeling small fruits and vegetables. The small chef blade is versatile in the kitchen. It is suitable for a variety of foods and sizes. If you want only one knife in your kitchen (yeah, that's it...), this one we recommend. Finally, we have the two smaller models: the utility knife and the vegetable knife. We slightly moved the point upwards on the utility knife. This idea came from one of our test leaders. He preferred this design to make it more suitable for bone cleaning and cutting food decorations. The vegetable knife is designed with a short and thin blade to improve the user's dexterity when cutting and cleaning small fruits and vegetables. »
