The burr - a natural outgrowth of the wood - generates highly distinctive swirling patterns, much sought-after in fine cutlery for their unique aesthetic character and ability to reveal a beautiful polish.

Mercorne stabilization - impregnation of the heart with resin using a process that has been kept secret since 1992 - makes this wood denser, more homogeneous and mechanically superior. Since 2020, the new recipe is odorless and offers a better impregnation rate. This handle is made up of 2 appliquéd inserts: the pattern on insert 1 corresponds exactly to that on insert 2.
