In the red deer (Cervus elaphus), the most widespread species in Europe, the antlers develop each year from mid-spring onwards, fall naturally in winter, then grow back with a new branch. This annual fall is called the moult, and it is this natural collection - without felling - that provides the bulk of the andouillers used in crafts. The material can be cut, filed and sanded without difficulty, but gives off a characteristic odor during mechanical machining - provide good ventilation. The natural surface, slightly grainy and mottled, is often kept as is for exterior finishing; the interior is rarely exposed.

Color and appearance

Shades range from light ivory-beige on young or recently molted pieces, to golden brown and dark brown on older or weathered andouillers. The surface appearance is matte and natural, with reliefs specific to each piece. It is possible to stain or wax the andouiller, but many cutlers prefer to leave it raw to preserve its wild character.

How to choose andouillers for knife handles?

The choice of andouiller depends above all on the desired final shape and type of knife:

• The main shaft (thick, straight section) is suitable for long handles requiring a good grip, such as hunting knives or camp knives.
• Branches and points (thinner, curved sections) allow for short handles or original ergonomic shapes.
• The daguet (young deer antler) offers more regular cross-sections, ideal for beginners or cutlers who want a homogeneous result with less shaping work.
• Whole blanks are suitable for experienced cutlers who wish to cut their own sections to suit the project.

It is advisable to check the internal section before shaping: if the pith is too spongy in one area, it can be stabilized with resin or avoided during cutting. Andouillers that have been dry for at least a year generally offer better dimensional stability.

Is it possible to stabilize a deer andouiller?

Yes, some knifemakers choose to stabilize sections with excessively porous pith. Vacuum impregnation resin replaces the micro-porosities and reinforces the piece's rigidity. This operation is particularly useful on terminal branches or lighter pieces. Compact barrel sections generally don't need it.
