Fig-grained birch (Betula pubescens) is one of the most sought-after Nordic woods among knife makers due to the uniqueness of its grain pattern. Its burls and twisted trunks—formed in Finland, Scandinavia, or Carinthia under harsh climatic conditions—produce characteristic flecks and brown spots against a creamy white background, making each piece unique. Lightweight and easy to work with, it lends itself perfectly to resin stabilization for heavy-duty use.
At Mercorne, every birch plank and blank has been hand-selected for 34 years based on the quality of its grain and the uniformity of its fiber. Our materials are cut in our workshop in France into sizes suitable for artisanal cutlery. Are you unsure whether to choose natural, figured, or stabilized birch? Olivier personally answers all your technical questions.
