Wood offcuts for cutlery: origins and benefits

Wood offcuts are the residual pieces left over from the cutting and slicing of boards or blocks processed in the workshop. In a demanding artisanal approach, these pieces are not thrown away: they are sorted, calibrated and offered in batches to cutlers. At Mercorne, offcuts come from our own stock of species - stabilized woods, rough woods, burls, exotics - and are cut in our Langogne workshop. The aim is twofold: to reduce material wastage and to give all cutlers, whether beginners or experienced, access to noble species at a controlled cost.

Batch properties and characteristics

A batch of Mercorne off-cuts is not homogeneous by nature: that's precisely what makes it so rich. Each batch may contain several different species, with varying dimensions. The pieces are generally suitable for the manufacture of :

• Handles for small knives (office, light folding, pocket)
• Decorative inserts and bolts
• Side plates
• Marquetry or inlay parts
• Prototypes and finishing tests

Species included in batches vary according to arrivals and current production. They may include stabilized woods (colored or natural), fine-grained rough woods, or exotic woods of varying density. Color, grain and grain differ from piece to piece - something many knife makers look for to create singular pieces.

How to use off-cuts for your knife?

Before buying a batch, it's useful to define the intended use. Criteria to consider:

• Piece size: most pieces are smaller than 125x25x6mm slabs (these are off-cuts)
• Species: stabilized wood is easier to work and more resistant to humidity; untreated wood requires more care in finishing.
• Level of skill: for beginners, regular-grain woods (birch, maple) are more accessible than irregular-grain woods (burl, burl).
• Aesthetics: offcuts often offer unexpected shapes - flamed, fluted, burr - not found on standard boards.

Experienced cutlers appreciate off-cut lots for their controlled unpredictability: you know what you're buying in terms of quality, but each piece reveals something unique when machined. It's a good way of testing a species before investing in a larger format.

Frequently asked questions about wood scraps

What species can be found in a batch of off-cuts?

The composition of batches varies according to the production in progress in our workshop. They generally include stabilized woods (maple, birch, poplar), exotic woods (ebony, rosewood, padouk) and French woods (walnut, ash, cedar). The exact list is not guaranteed per batch, but the quality of the pieces is.

Are off-cuts of the same quality as standard planks?

Yes. At Mercorne, off-cuts are pieces of the same material as our selected planks - just shorter or narrower. We do not include in our batches any piece with an unacceptable defect (deep crack, rot, open knot).

Can I order a batch with a specific species?

Our off-cuts are assembled in a variety of ways, and cannot be customized by species. If you are looking for a specific species in small format, please consult the individual product sheets for each category: some species are available in pieces or small blocks outside the batches.

Are stabilized wood off-cuts treated in the same way as standard blocks?

Yes, off-cuts from stabilized wood have undergone the same vacuum and resin stabilization process as whole blocks. They offer the same properties: resistance to humidity, dimensional stability and ease of polishing.

What finish should I apply to a piece of wood that has been worked into a handle?

This depends on the species. For stabilized woods, progressive polishing down to 2000 grain is often sufficient to obtain a glossy finish without oil or varnish. For rough woods, a suitable finishing oil (tung oil, Danish oil) is recommended to protect and reveal the grain. If in doubt, Olivier can advise you according to the species concerned.
