The Plane Tree: Overview and Origins

The common plane tree (Platanus × hispanica, sometimes called Platanus acerifolia) is a hybrid tree resulting from a cross between the Oriental plane tree and the Western plane tree. A fixture in European landscapes for centuries—lining roads, avenues, and village squares—it can grow to a height of 25 to 30 meters and live for several centuries. Its wood, long overshadowed by more prestigious species, is now being rediscovered by artisans for its unique qualities and its availability in Europe.

Properties and Technical Characteristics

Plane tree wood has a moderate density, generally between 0.60 and 0.75 g/cm³, making it easy to work with in the workshop. Its hardness is comparable to that of beech, offering good machinability without requiring specialized tools.

The grain patterns: the signature of sycamore

The most sought-after characteristic of sycamore in cutlery is undoubtedly its figure—those flame-like or mirror-like patterns that appear in the radial cut when the wood is quarter-sawn. These silky reflections, wider and more visible than those of beech, give each handle a visual depth that oil or matte varnish finishes further highlight. Each piece is therefore slightly unique: even within a batch, the patterns vary depending on the position within the trunk.

Machining Properties

Plane tree works well with a saw, lathe, and sander. Its straight grain facilitates roughing out, and its surface takes oils and waxes evenly. It is not prone to warping during drying, which limits the risk of warping once the handle is assembled. Its natural durability is low (Class 5), so it is recommended to protect it with a suitable finish—linseed oil, beeswax, or varnish—to ensure longevity and resistance to moisture.

How to choose sycamore for your knife?

Sycamore wood is suitable for a wide range of projects, from kitchen knives to hunting knives and pocket knife scales. Here are a few guidelines to help you make your choice:

• Beginner level: sycamore is easy to work with and forgives sanding mistakes. It is a good choice for your first projects in natural wood.
• Advanced level: To make the most of its grain patterns, opt for quarter-sawn cuts. Gradual sanding up to 400-grit reveals the wood’s full depth.
• Blade/handle pairing: its neutral tone pairs well with both polished stainless steel and carbon steel with a natural patina. It complements brass or black fiber spacers.
• Recommended finish: Danish oil, tung oil, or boiled linseed oil for a natural look. Matte varnish for enhanced protection on knives used intensively.

Mercorne and sycamore: 34 years of selection

Plane tree wood is one of the European species that Mercorne selects for its craftsmanship value and local availability. Each board and each handle is manually inspected in our workshop in Puy-de-Dôme before being added to the catalog. Our cuts are made in France, with precise tolerances to ensure a clean finish upon delivery.

Our catalog offers sycamore in several forms—raw handles, blocks, and slabs—in standard sizes for artisanal cutlery. Orders are shipped within 24 hours, with free shipping on orders of €90 or more and returns accepted within 15 days. Olivier is available by email or phone for any technical advice before you place your order.

Frequently Asked Questions About Sycamore Wood for Knives

Is sycamore wood suitable for kitchen knives?

Yes, provided it is properly finished. Sycamore wood is not naturally water-resistant, so it must be protected with a food-safe oil (linseed, tung) or a water-based varnish to withstand the humidity/drying cycles in the kitchen. With regular maintenance, it produces excellent results on table knives or chef’s knives.

What is a maillure, and why is it sought after?

A figure is a medullary ray pattern visible when the wood is cut on the quarter. In sycamore, these patterns take the form of spots or silky flecks that reflect light differently depending on the viewing angle. This is what gives sycamore its characteristic appearance, often compared—though more subtle—to that of sycamore maple.

Can sycamore be stabilized?

Plane wood is a candidate for stabilization, although this practice is less common than for other species such as birch or elm. Stabilization gives it better resistance to moisture and allows the use of colored resins to accentuate its grain patterns. Mercorne also offers stabilized sycamore in a dedicated product line (see the Stabilized Sycamore category).

How do you care for a natural sycamore neck?

A sycamore neck can be easily refinished with boiled linseed oil or tung oil, applied once or twice a year depending on use. Light sanding with 400-grit sandpaper between applications restores a satin finish that looks nearly like new. Avoid prolonged immersion and dishwashers, which weaken all unimpregnated natural woods.
