White mother-of-pearl is one of the oldest materials used in cutlery. Produced by Pinctada margaritifera and other bivalve molluscs, it is formed by the progressive deposition of layers of aragonite and conchyoline, giving rise to its characteristic iridescent luster - moon-white with golden, pink or green reflections depending on the angle of the light. Its moderate hardness (3.5 to 4 on the Mohs scale) and naturally polished surface make it a pleasant material for experienced knife-makers to work with, from roughing to finishing.
At Mercorne, white mother-of-pearl has been selected for 34 years for its iridescent quality and the homogeneity of its plates.
